Chicken Curry and Rice

Peel and finely dice the garlic and onion.

Put 4 tablespoons oil into a large skillet and place over medium heat. Add the garlic and onion, season with a pinch of salt, and cook until the onion softens and turns translucent.

In the meantime, dice the chicken and sprinkle with curry powder. Turn up the heat and add the chicken to the skillet. Sear until golden, remove, and set aside.

Add the rice and mix with the onion. Stir for 2 minutes.

Pour in the coconut milk, stir, and cook over medium heat. When only half an inch of coconut milk is left, add the curry, chicken, and salt.

Cook until all the liquid is absorbed. Turn off the heat, cover with a cloth, and let stand for 5 minutes before serving.

You can use chicken sold in precut pieces.
Depending on the kind of rice you use, it will absorb more or less liquid. Try experimenting with different rice varieties.
