Asian-Style Rice with Chicken and Vegetables

Add a tablespoon of olive oil into a pot and once it's hot, add a sliced garlic clove. When it begins to brown add a cup of rice. Stir it for several minutes and then add 2 cups of hot water and a teaspoon of salt. Cook on high heat for 7 minutes and then lower the heat and cook on low for 8 more minutes. If in this time the rice has absorbed all the water and is still hard, add more water. Let it stand with the lid on for some time.

While the rice is cooking, take advantage and prepare the rest of the ingredients. Cut the onion, pepper, and zucchini into cubes. Peel the ginger and grate it.

In a large pan add the olive oil and cook the vegetables you have just cut and the ginger on medium heat for 8-10 minutes.

In another pan with olive oil cook the sliced chicken breast. Add a bit of curry powder. Remove from the pan (and cut into smaller pieces if you would like).

Add the chicken to the pan with the vegetables and mix the ingredients well. Add the soy sauce.

Lastly, add the rice to the pan and stir well. Cook for about 1 minute so the flavors integrate. Enjoy!
