Egg, Spinach, and Sweet Potato Bowl

Peel and cut the sweet potato into medium dice. Then bring water to a boil in a pan with a little salt and cook the sweet potato. This will take roughly 15 minutes, depending on the size of dice. Once cooked, drain and let cool.

Bring water to a boil in another pan and add the eggs. Cook for 10–15 minutes. Remove from the pan, let cool, and then peel.

While the sweet potato and eggs are boiling, wash the spinach and cherry tomatoes. Cut the spinach leaves into pieces the desired size and halve the tomatoes.

Scatter the spinach over the bottom of a bowl. Slice the hard-boiled eggs and wash and drain the corn kernels. Arrange the cherry tomatoes, sweet potato, sliced eggs, and the corn over the top.
Tips & Tricks
Dress simply with oil, vinegar, and a pinch of salt for an awesome result.
You can boil the sweet potato and eggs in the same pan. That way you have less to wash.
