Peel the sweet potato and dice into small cubes. In a pot add water and a touch of salt, and cook the sweet potato.

Once tender, remove the sweet potato from the pot and set aside. Wash the spinach and slice into thin strips.

In a bowl add the spinach strips to one side. Remove the tuna from the can and place in the center of the bowl. Finish the bowl by adding the cooked sweet potato. Enjoy!
