Wash and cut the eggplant lengthwise into medium-thick slices.

Put a little olive oil into a griddle pan. When hot, fry the eggplant and season with a pinch of salt. Cook on both sides, then transfer to a plate and set aside

In another skillet, make the sauce. Mince the onion, tomato, garlic, and parsley. Add the minced ingredients to the skillet, season with a pinch of salt, and cook for 5–7 minutes. Then add the ready-made tomato sauce. Let soak up the flavor for a few more minutes.

Now add the eggplant slices to the skillet with the sauce. Stir well to incorporate into the sauce. Cook for 2–3 more minutes then serve on a plate.
