Instructions

Place all of the ingredients in the blender cup and blend for 2 minutes so that all of the chia seeds are crushed. You should have a fluid mixture, but not too liquid.

Heat up a pan on medium heat with a drizzle of oil. Add the mixture slowly, turning the pan in a circle so that the batter covers the whole pan. This should be a thin layer

Flip the crepe when the edges can be moved or flipped up easily.

Cook on the other side and repeat these steps until all of the batter is finished.

You can fill with spinach, fresh cheese, and Serrano ham.
Tips & Tricks
Are you interested in some ideas for fillings? I filled them with Serrano ham, spinach, and cream cheese. In others I filled them with avocado, smoked salmon, and cilantro.
