Instructions

Peel the carrots, dice, and then place into the food processor or blender. Add the eggs, milk, flour, and some salt. Blend well.

In a medium-sized pan drizzle some olive oil so that it is well greased. Add some of the carrot batter and tilt the pan so the batter covers it all. Cook on medium heat for 1-2 minutes (until you see little bubbles on the top.) Carefully flip the crepe. Repeat these steps until you finish the batter. Set the crepes aside.

Wash the lettuce and shred (thinly slice). Slice the tomato and dice the avocado.

Fill each crepe with some lettuce, several tomato slices, some diced avocado, and some tuna.

Tips & Tricks

We served these crepes with a simple yogurt sauce. We mixed a plain unsweetened yogurt, a drizzle of lemon juice, a finely diced clove of garlic, and some salt.
