Instructions

Start by beating the eggs well in a bowl. Then add the oil, and mix well.

In a different bowl, combine the oats with the flour, yeast, a pinch of salt, and the brown sugar. Stir with a spoon. Gradually incorporate the egg and oil into the dry mixture. Mix thoroughly.

Roll the dough into small balls and arrange on a baking sheet. Lightly press each ball to flatten into a cookie shape.

Bake in the oven at 350ºF, about 10 minutes. When you see the edges turn golden, they’re ready to take out. Transfer to a rack and let cool. The outside of the cookies will finish hardening.

Tips & Tricks

If you have vanilla essence, you can add 1 teaspoon to the egg and oil mixture for an even better taste.

Try sprinkling a handful of nuts over the top before baking. This will make the cookies more nutritious.

Remember to space the dough balls apart when arranging on the baking sheet so they can expand in the oven without sticking together .
