Instructions

Peel and grate the carrot and ginger.

Combine the oats, oat flour, grated carrot and ginger, cinnamon, and dry yeast in a bowl. Set aside.

Beat the egg in another bowl. Add the oil and honey and stir well.

Pour the liquid ingredients into the bowl containing the dry ingredients and stir well until the ingredients are incorporated. Be patient while stirring; it make take a couple of minutes.

Use your hands to roll the mixture into balls and place, spaced apart, on a baking sheet lined with parchment paper.

Squash the balls a little to make the cookie shape and bake in the oven at 400°F for 15–20 minutes, until golden. Keep an eye on the oven because these cookies turn golden very quickly before burning. Once golden, turn off the oven, transfer to a rack, and let cool.
