Instructions

Preheat the oven to 360°F.

In a bowl, mix the eggs with the sugar, milk, oil, juice of 1 orange, and cocoa powder. It will make life much easier to use mixer or immersion blender.

In another bowl, mix the flour with the yeast/baking powder and ground ginger.

Add the flour mixture to the bowl with the wet ingredients and mix well (use an immersion blender if it’s easier for you).

Grease a baking pan with butter and fill with the batter.

Bake at 360°F for 25–30 minutes. The cake will be ready when you prick the center with a toothpick and it comes out clean. Turn off the oven, put the baking pan on a wire rack, and let cool before turning out.

We used whole-wheat flour, but you can use spelt flour, buckwheat flour, almond flour, or anything you might have at home.You can also finish the cake by sprinkling the top of the batter with dark chocolate chips just before putting it into the oven.
