Pasta with Cauliflower Sauce

Add water and a pinch of salt to a pot and cook the pasta for the time indicated on the package. Once cooked, drain.

While the pasta is cooking, take advantage of your time to prepare the sauce. For this you should wash and chop the leek, and chop the cloves of garlic.

Add a generous amount of olive oil to a large pan. Lightly fry the leek and garlic over medium heat for 5 minutes.

Wash and finely chop the cauliflower before adding it to the pan. Cook over medium heat for another 5 minutes.

Add the milk and a touch of salt to the pan and cook over medium heat until the cauliflower is tender and the sauce has thickened. Once this has been achieved, put these ingredients into the blender and blend.

Pour the sauce over the pasta and if you'd like, add a handful of cheese on top and place in the oven to cook au gratin.
Tips & Tricks
If you don't have leek, don't worry, you can use onion instead.
If you would like to make the recipe vegan you only have to substitute the milk for a plain plant-based one.
