Instructions

Add the salt and vinegar to 4 cups water in a pan and bring to a boil. Then break an egg into the water and simmer for 2 minutes. Remove with a skimmer and repeat the process for the other egg. Set aside.

Spread each slice of bread with butter and toast lightly.

Cover each piece of toast with a teaspoon of grated cheese, and top with the turkey, poached egg, and another teaspoon of grated cheese.

Place under oven broiler for 30 seconds or until the cheese melts. Then serve.

Tips & Tricks

Add a little dried oregano or basil, if you have some, for a special touch.

You can use your favorite cheese, replace the turkey with ham, or add some slices of tomato... the options are endless!

If you worry that you’ll get some eggshell in the pan of water, break the egg into a bowl first and then slide it carefully into the pan.

If you don’t have an oven, you can use the grill function in the microwave, but don’t overcook or the egg yolk will set. The point of this recipe is for the yolk to be runny.
