Instructions

Cook the egg in a pan with 4 cups water and 1 teaspoon salt for 10 minutes. When the water comes to a boil, take out the egg, cool in cold water, and peel.

Combine the salmon, pickles, and half of the egg in a food processor and pulse a few times. Don’t set the food processor on high speed or you’ll end up with a puree. You only need to coarsely chop the ingredients. If you don’t have a food processor, you can chop them into very small pieces with a knife.

Toast the bread (this sandwich also works well if left untoasted). Spread the salmon, pickle, and egg mixture over each slice. Decorate each sandwich with a few pickle slices, or use cornichon pickles cut lengthwise, and serve. It couldn’t be easier.

Tips & Tricks
