Instructions

Cook the quinoa according to the instructions on the package (we explain how in Tips and Tricks).

Cut the onion and red cabbage, washed, into strips.

Heat a little olive oil in a skillet. Then add the onion and cabbage. Lightly fry over medium heat for 6–8 minutes, stirring often, until soft.

Add the chickpeas and cook with the vegetables for a few more minutes, continuing to stir.

Finish by adding the quinoa. Mix with the chickpeas and vegetables and serve.

Tips & Tricks

Wash the quinoa under running water. Bring 1 cup water to a boil in a pan. Then add the quinoa and cook until the kernels have popped open, about 20 minutes. Remove from the heat, drain, and set aside for later.

If you want to give your dish a special touch, add 1 teaspoon ground cumin.
