Instructions

Wash the quinoa under running water. Bring around 1 cup water to a boil in a pan. Then add the quinoa and a pinch of salt. Cook until the kernels have popped open, about 20 minutes. Remove from the heat, drain, and let cool.

While the quinoa is cooking, mince the onion and garlic.

Heat a few tablespoons of olive oil in a large skillet. Then add the vegetables and lightly fry over medium heat, stirring often. After 2–3 minutes, add the spinach and cook with the vegetables for a couple more minutes.

When the spinach has wilted, add the chickpeas, cumin, and a little salt and cook for another 3–4 minutes, continuing to stir.

Finish by adding the quinoa and mix with the rest of the ingredients. Let it cook for a couple of minutes longer, and then serve on a plate.
