Preheat the oven to 360°F.

Finely slice the onion and lightly fry in a large skillet with a little olive oil over medium heat, about 10 minutes, stirring regularly.

In the meantime, wash and slice the zucchini into 1/4-inch-thick rounds. When there is about 5 minutes of cooking left on the onion, add the zucchini rounds to the skillet. Season with a little salt and cook together for 5 minutes, stirring often.

Use a rolling pin to roll out the pie dough and line the bottom of an ovenproof dish.

Spread a few tablespoons tomato sauce (preferably homemade) over the dough. Arrange the onion rings and zucchini rounds over the top and sprinkle all over with the grated cheese.

Bake in the oven until the dough is cooked through and golden, about 20 minutes. Turn off the oven and take out the tart. You can add a handful of arugula as a final flourish. Enjoy!
