Instructions

Preheat the oven to 350°F.

Wash the vegetables and slice into thin rounds of roughly equal thickness.

Sprinkle salt over the eggplant to release water and to remove any bitterness. Let stand for 10 minutes.

If you’re going to use tomato puree, spread inside an ovenproof dish as a base and assemble the vegetables over it, alternating slices of each vegetable. Otherwise, just lightly brush the inside of the dish with olive oil before assembling. Season with a little salt, pepper, and any spices you might like. Scatter finely sliced garlic over the top and drizzle with olive oil.

Roast in the oven for 30 minutes. The exact cooking time will depend on how thick you cut the vegetable slices. Serve straight to the table. Bon appétit!
