Salmon with Honey and Mustard

Preheat the oven to 400°F.

Wash and cut the zucchini into rounds or small chunks. Cut the onion into strips.

Put the vegetables into a roasting pan and drizzle with olive oil. Season with a pinch of salt. Stir with a spoon and cook in the oven for 10 minutes.

In the meantime, combine the mustard, honey, and olive oil in a bowl. Whisk briskly to a thick sauce. Brush the top of the salmon with the sauce.

After cooking the vegetables for 10 minutes, take the pan out of the oven. Stir the vegetables, then make a space in the middle of the pan and lay the fish inside it. Return the pan to the oven and bake at 400°F for 12–15 minutes. The time will depend on the thickness of the fish and the kind of oven you have.

When the salmon is cooked to your liking, turn off the oven and serve the fish and vegetables on plates. Enjoy!
Tips & Tricks
You can add other vegetables to the pan. We added a few potatoes we had lying around, but you can use up any leftover vegetables you don’t know what to do with.
