Preheat the oven to 390°F.

Cut the onion into strips. Heat a little oil in a skillet and lightly fry the onion over medium heat, stirring regularly, until soft.

Wash and dice the tomato.

Beat the eggs in a bowl. Then add the fried onion and diced tomato. Season with a pinch of salt and mix well.

Grease silicone molds or a muffin pan with a little oil. Use a spoon or ladle to and fill with the molds with the mixture. Bake for 10–15 minutes, or until a toothpick inserted into the center comes out clean.
Tips & Tricks
Remember to grease the molds before filling them. We experimented with paper cupcake liners but we don’t recommend them because the paper sticks. So use silicone molds or a muffin pan.
