Instructions

Beat the eggs in a bowl.

Wash and cut the mushrooms into slices or small pieces, as desired. Mince the onion.

Heat a little olive oil in a skillet. Add the vegetables and lightly fry over medium heat for 4–5 minutes until soft, stirring often. Season with a little salt.

Now add the eggs and scramble (preferably using a wooden spoon). Cook as desired. If you prefer your eggs to be juicier, take them out of the skillet sooner; if you like them more cooked, cook them longer. Finally, add the goat cheese on top. It will melt with the heat.

Toast the bread and place the scrambled eggs on top.
