Spaghetti with Vegetables, Poached Egg, and Goat Cheese

Cook the spaghetti in a pan of boiling water for the time indicated on the package. Then drain and set aside for later.

Wash and cut the vegetables as desired. Lightly fry them in a skillet with a drizzle of olive oil until golden. Season with a little salt.

To poach the egg, half fill a glass with water and add a pinch of salt and the vinegar. Very carefully add the egg. Microwave on high for 1 minute. Then drain off the liquid.

Serve the spaghetti with the vegetables. Add the poached egg and then crumble the goat cheese over the top. Season with a little pepper and enjoy!
