Spinach Omelet with Cheese

Either slice or dice the onion and wash the spinach. If the spinach is too big, slice it.

Drizzle some oil into a pan and lightly fry the onion for a couple of minutes, until the onion becomes slightly translucent. Once achieved add the spinach and sauté for about 2 minutes. Then add some salt to the vegetables.

Beat the eggs.

Mix the vegetables from the pan into the bowl with the beaten eggs and incorporate the cheese.

Add a few drops of oil into the same pan used to cook the vegetables. Pour the egg mixture into the pan and let it cook. When the mixture is cooked on the bottom and a little firm on the top, it's time to flip. Flip the omelet and let the other side cook (this will resemble the cooking of the Spanish potato omelet). Remove from the pan and serve.
