Instructions

Peel the sweet potato and cut into medium size dice. Wash and chop the zucchini. Chop the onion and cilantro. Lastly, open the cooked red kidney beans and wash, and set aside.

Pour water into a pan. When it begins to boil add the sweet potato and cook for 5 minutes. When the 5 minutes have passed add the zucchini and cook together for 5 more minutes. After this time turn off the heat, drain and set aside.

Drizzle olive oil into a large pan. When it's hot add the chopped onion and fry over medium heat for 3 minutes. Next, add the sweet potato and zucchini, the red kidney beans, and cook with a pinch of salt for 5-6 minutes.

After this time add the contents from the pan into a bowl and add a drizzle of lemon juice, the chopped cilantro, some salt and mix. Serve.

Tips & Tricks

This dish is ideal as a salad, but it can also be used as a filling for some delicious burritos. You would only need to fill the tortillas with this salad. And if you would like to make this dish more complete you can cook chicken breast and chop it and add it to the salad. If you do this, mix it with the other ingredients and then fill the tortillas with this salad filling. Or, instead of chicken you can make tofu, beef, pork, fish, seafood...whichever you like most.
