Instructions

Prepare the ingredients as follows: Wash and cut the spinach into strips. Wash and halve the cherry tomatoes, and crumble the goat cheese with your hands or a knife.

Beat the eggs and season with salt and pepper. Add the spinach strips to the beaten eggs and mix together.

Heat a little oil in a skillet. Then add the egg and spinach mixture, covering the surface of the skillet completely and let cook.

When the egg looks set enough, add the goat cheese and tomatoes. Let the omelet finish cooking. You can fold it over with a spatula or leave it half-open or fully open, as desired.

Tips & Tricks

If you like the spinach well cooked, wilt in the skillet for 1–2 minutes as a previous step. Then add to the eggs and continue with the recipe.
