Instructions

Mince the garlic. Wash and dice the zucchini. Wash and halve the cherry tomatoes.

Heat a little olive oil in a skillet and add the garlic and zucchini. Season with a little salt and lightly fry over medium heat for 5 minutes.

Add the cherry tomatoes and half of the cheese. Cook for 2–3 more minutes.

Beat the eggs, add to the skillet, and stir using a wooden spoon. Cook as desired. If you cook the eggs for a short time, they will be moist and light.

Transfer the contents of the skillet on a plate. Sprinkle the rest of the cheese on top, and season with a sprinkling of pepper. Enjoy!

Tips & Tricks

If you have a couple of basil leaves, you can cut them into strips and scatter over the eggs before serving.

If you don’t have goat cheese, use any cheese you have in your fridge, such as ricotta.
