Wash and cut the leek and zucchini into thin rounds.

Pour the oil into a large skillet and heat, then add the vegetables. Season with salt and pepper. Lightly fry the vegetables for 10–15 minutes, stirring occasionally until they're soft, i.e., cooked.

Beat the eggs, add a pinch of salt, and pour into the skillet. When the mixture sets on the bottom, flip the frittata to finish cooking on the other side (use a plate, as if making a Spanish omelet). Serve.
Tips & Tricks
If the zucchini is very large, just use half.
It’s better to cut the vegetables into very thin slices because they will cook more quickly.
