Instructions

In a medium-size saucepan add the rice and 1 cup of water, bring to a boil then cover and simmer over low heat for approximately 20 minutes until the rice is tender.

Next, cut the lettuce into bite-size pieces and place it into serving bowls. Set aside.

Then, once the rice is cooked, place the rice alongside the lettuce and top the dish with the beans, cheese, salsa, and greek yogurt.

Tips & Tricks
