Instructions

Slice the apple into thin strips, then add the slices to a small skillet with the butter and 2 tsp of brown sugar, heating until the apples become translucent and the butter and brown sugar form a syrup, approximately 5 minutes.

Meanwhile, combine the oats, almond milk, water, greek yogurt, 2 tsp of brown sugar, and vanilla extract together in a saucepan, cooking on low heat until the oats have softened and have formed a porage-like consistency, approximately 5-7 minutes.

Crush the almonds into small bits for the topping while the apples and oatmeal are cooking.

Once cooked, divide the apple slices and oatmeal mixture between two small bowls, garnish with the crushed almonds and cinnamon and sugar.

Different apple varieties will offer more sweet or tangy notes to this recipe.

You can also use dairy milk or a different oil of your choice instead of the butter.

The oatmeal could also be made in the microwave.
