Asparagus and Sun-Dried Tomato Pasta

Instructions

Put water to boil in a pot and cook the pasta as indicated in the instructions. Once ready, drain. Add the pesto sauce to the pasta, mix well, and set aside.

Place the tomatoes on a cutting board and slice.

Wash the asparagus, dry, and remove the hard part at the bottom. Drizzle some olive oil in a large pan and once it's hot add the asparagus. Cook for several minutes. Remove from the pan and sprinkle some rock salt on top.

Serve some pasta with the sauce on the serving plates. Place the asparagus, sliced sun-dried tomatoes, and the ball of mozzarella cheese (you can also use burratta). Drizzle everything with some olive oil and lemon juice and serve.
Tips & Tricks
If you don't have pesto sauce you can add a bit of butter and garlic salt to the cooked spaghetti to give it more flavor.
