Artichoke and Mozzarella Lemon Pasta

Instructions

Put water to boil in a pot. Once it begins to boil add some salt and cook the pasta for the time indicated in the instructions. Once 5 minutes has passed, add the frozen artichokes and boil with the pasta. When the cooking time is up, drain the pasta and artichokes.

Slice the onion, and wash and halve the cherry tomatoes.

Lightly fry the onion in a large pan for 4-5 minutes over medium heat.

Add the artichokes and pasta to the pan and sauté over medium-low heat for 5 minutes.

Squeeze half lemon and add the juice to the ingredients in the pan. Add some more salt and if necessary, add more oil. Leave it for 3-4 minutes.

After this time turn off the heat and sprinkle the mozzarella cheese over the pasta along with the halved cherry tomatoes. Season with several pinches of black pepper, along with some more olive oil if necessary. Serve and enjoy.

Tips & Tricks

Do you have basil? If so, wash and finely chop it. Sprinkle it on top of the pasta right before serving.

In this recipe we used frozen artichokes, but if you have fresh or preserved artichokes you can use them too. You will only need to adapt the recipe to them (peel and cut if they are fresh, or drain them if they are preserved).
