Instructions

Boil the pasta in a pan with water and a pinch of salt for the time shown on the package.

Wash the lemon and grate the zest. Set aside.

Use a coarse grater to shred the zucchini and drain in a strainer, pressing to remove as much water as possible.

Heat a little olive oil in a pan and lightly fry the garlic. Add the zucchini and stir a couple of minutes. Add the light cream and lemon zest and season with a little salt. Mix and let cook over medium heat for 5 minutes.

Mix the pasta into the sauce in the same pan, transfer to a serving dish, and serve.
