Avocado, Egg, and Tomato Sandwich

Put water to boil in a pot. Once it begins to boil add some salt and the eggs. Cook for 10-12 minutes. After this time remove the eggs, chill in an ice bath, and then peel. Dice the egg finely and set aside.

Open the avocado and remove the flesh. Place in a bowl and add the cream cheese. Use a fork to mash everything and mix well. Add some salt.

Add the diced egg you had set aside and gently mix.

Dice the cherry tomatoes and add to the avocado mixture.

Toast the bread and spread the avocado mixture on top.
Tips & Tricks
If you would like to give the mixture extra flavor you can add half a teaspoon of mustard.
