In a pot, pour cold water, and place your eggs inside. Let them sit in the pot over medium heat until the water boils. Cook for approximately 10-12 minutes. Remove and let them cool. Once they're cold, peel them and slice them.

Open the avocados, remove the flesh and mash with a fork. Add a pinch of salt and mix.

Toast the bread. Spread some avocado on the top and bottom slices of bread, add several slices of egg and close. Repeat these steps to make the other sandwich.
Tips & Tricks
Add some mixed nuts to your sandwich. We paired them with dried blueberries and chia seeds, but any other options will taste great.
You can use whole wheat bread which is much more nutritious.
