Avocado and Chickpea Sandwich

Scoop the flesh out of the avocado and put into a bowl.

Add the chickpeas.

Mash with a fork (you can set aside a few whole chickpeas to add later to give the filling texture).

Mince part of an onion and add to the mixture.

Squeeze the juice of 1/2 lemon and add 1 teaspoon to the mixture. Season with a pinch of salt. Stir.

Cut open the bread rolls and spread with the mixture. If you’ve set aside any whole chickpeas, add them now.
Tips & Tricks
You can also toast the bread if you like.
If you mince a little cilantro and add it to the filling, it will add depth to the flavor.
You can also season with black pepper.
