Smoked Salmon with Poached Egg

Instructions

Toast the bread in a toaster.

Combine the water and vinegar in a microwave-safe bowl. Microwave on full power until the water boils.

Crack the egg into the boiling water. Close the microwave door and cook on full power for a little longer, 30 seconds should long enough for the egg to cook while keeping the yolk soft. If you prefer the yolk firm, cook for a few more seconds. Take the bowl out of the microwave and use a spoon to remove and drain the egg. Repeat the process with the second egg.

Spread each slice of toast with cream cheese, cover with a slice of smoked salmon and a little arugula, and place the poached egg on top. Season with a little salt and pepper and serve.
Tips & Tricks
There should be enough water in the bowl to cover the egg completely. Half a cup is normally enough, but check the egg is covered because it also depends on the size of the bowl.
If you have a microwave egg poacher, use it. It’s makes life a lot easier. Just add the egg with a pinch of salt and heat in the microwave for several seconds. Remove when the egg is poached to your liking.
