Bacon and Potato Quiche

Peel the potatoes and cut in half. In a pot of boiling water, add the potatoes and cook for 10 minutes (it's not necessary to cook all the way through). After this time, drain them and let cool.

Beat the eggs with some salt in a bowl. Add the cream and mix again.

Slice the potatoes into medium sized slices when they are at room temperature.

Preheat the oven to 400°F. Grease a mold, or place parchment paper into it to prevent any sticking.

Begin by placing a layer of sliced potato. Place 2 slices of cheese on top and then 2 slices of bacon on top of that. Repeat the steps to form another layer. Finish by adding more sliced potatoes.

Now pour the beaten eggs with cream over the mold. You will notice that the liquid mixture will slowly distribute evenly.

Sprinkle on a few handfuls of cheese before placing into the oven and baking for approximately 30 minutes. Once you stick a knife in the middle and it comes out dry, it will be ready to come out. Remove from the mold carefully and serve.
Tips & Tricks
We suggest that you enjoy this dish once it comes out of the even while the cheese is hot and melted.
It's not necessary to cook the bacon beforehand because the heat from the oven will cook it.
You can add more cheese or bacon to this dish if you'd like. We found it just perfect with the amount we indicated.
