Cauliflower Pizza with Bell Peppers and Onion

Preheat the oven to 400°F.

Use a food processor to chop the cauliflower to pieces the size of rice grains.

Cook the cauliflower in the microwave on full power for 8 minutes. Then put the cauliflower pieces in the middle of a clean cloth and roll the cloth tightly. Twist the ends hard to wring out as much the water as possible from the cauliflower. You need to remove as much water as possible from the cauliflower so the pizza can turn crisp.

Next, mix the dry cauliflower in a bowl with salt and beaten egg. Stir well to obtain a dough-like mixture.

Use a rolling pin to roll the mixture out over a silicone mat or parchment paper greased with a little oil. Shape like a pizza. Bake in the oven for 10 minutes at 400°F.

Take the pizza crust out of the oven and spread with tomato sauce. Then cover with onion and bell pepper, cut into strips, and scatter over with a few handfuls of cheese. Return to oven and bake, about 20 minutes, until you see the pizza and topping are cooked through (this will depend on your oven and how thick you’ve made the crust).
Tips & Tricks
The less moisture there is in the cauliflower, the crisper the pizza, so squeeze out as much as you can. Even so, because there’s no flour in the crust, it will never be as crisp as a conventional one. But it will still be absolutely delicious and a treat to eat.
You can add to the topping any leftover vegetables you might have in your fridge and never know what to do with.
Another option is to add mozzarella cheese to the crust mixture. Add 3 handfuls together with the beaten egg and salt and mix well to incorporate.
