Wash the spinach and finely chop the garlic and onion.

Add some olive oil to a pan and lightly fry the garlic and onion on medium-low heat. When they are tender add the spinach and cook on medium heat. Slowly the volume of the spinach will begin to reduce. Add some salt to the vegetables.

During the same time you can cook the pasta in a pot with boiling water. Cook for the time instructed on the package. Once cooked, save a cup and a half of pasta water.

Add the cooked spinach, walnuts, grated parmesan cheese, and a cup of the pasta water to a blender. Blend for several minutes, until the sauce is homogenous, with no pieces of walnuts left. Taste to see if it needs more salt or not. If it is too dense you can add more pasta water.

Mix the pasta into the sauce and enjoy.
