Instructions

In a pot of boiling water cook the pasta for the time indicated in the instructions. Once cooked, drain the pasta, but reserve about 1/2 cup of the pasta water.

Finely dice the onion, and cut the broccoli into smaller florets. Peel and slice the carrots.

In a pan add some olive oil. Once it's hot, lightly fry the onion. After about 3 minutes add the carrot and cook for 5 minutes.

Add the broccoli florets to the pan. Cook everything for about 5-7 minutes. Add salt to the vegetables.

Add the vegetables, cheese, tomato sauce, and pasta water to a blender. Blend very well or until there are no bumps in the sauce.

Mix the sauce with the pasta and serve with a bit of grated cheese on top.
