Chia Pudding with Strawberries and Yogurt

Mix the chia seeds, milk, and yogurt in a bowl and let it stand for a minimum of 10 minutes so that the seeds expand and can better absorb the nutrients.

Meanwhile, place the strawberries in a small pot and add a drizzle of water. Heat for about 10 minutes until the strawberries tenderize and then mash them with a fork until it has a jam-like consistency.

To serve, mix the strawberry compote with the chia pudding.
Tips & Tricks
Add the fruits of your choice on top, dehydrated coconut, nuts, or even some granola.
A trick to make the strawberries faster is to use frozen strawberries and to reheat them in the microwave for several minutes. When they become tender, mash them with a fork and it's ready!
Prepare the chia mixture, yogurt, and milk the night before so that it is ready to eat in the morning.
If you use plant-based yogurt, coconut yogurt will taste the best.
You can also use normal milk and yogurt instead of plant-based.
If you would like to sweeten the strawberries you can add a bit of agave syrup, maple syrup, honey, sweetener, or vanilla when cooking the strawberries.
