Chicken and Bell Pepper Couscous

Pantry ingredients
couscous
1 cup
salt

cumin powder

Instructions

Put 1 cup water and a little salt and olive oil in a pan and place over the heat. Just before coming to a boil, turn off the heat and add the cup of couscous. Let stand until it the couscous softens, and then stir. Wait for a few more minutes and then add spices, as desired, and mix in.

Preheat the oven to 400ºF for 10 minutes. Wash and cut the vegetables into small dice. Put on an ovenproof dish or baking tray, drizzle with olive oil, and season with a little salt. Bake in the oven for 30 minutes.

Heat a little olive oil in a skillet and fry the chicken until light golden. Cut into bite-size pieces.

When the vegetables are cooked, combine in a bowl with the couscous and chicken and mix well.
Tips & Tricks
This recipe also works well with any leftover vegetables you might have in your fridge.
For a vegetarian version, replace the chicken with chickpeas.
