If you don’t have instant quinoa, then you'll have to make it from scratch. It’s very simple. Wash the quinoa under the cold water stream to remove the saponin (the bitter-tasting layer covering the quinoa seeds). Fill a pan with water. You will need measure out 2 parts water to 1 part quinoa. Bring the water to a boil. Add the quinoa to the boiling water, reduce the heat to low, and cook until the kernels have popped open, about 20 minutes. Then the quinoa will be ready.

While the quinoa is cooking, wash and cut the bell pepper into thin strips. Also cut the onion and chicken breasts into strips.

Put a little olive oil into a skillet. When hot, add the onion and bell pepper and cook for 5 minutes.

Add the chicken to the skillet and season the contents with a little salt.

When you see the vegetables and chicken are cooked, add part of the quinoa (the amount you plan to eat) to the skillet. Stir well and then cook for 2–3 minutes. Remove from the heat and serve in a bowl.
Tips & Tricks
If you have any mushrooms, you can add 2 handfuls to the recipe. Wash and slice them, and cook together with the peppers and onion.
