Instructions

Rinse the quinoa under water. Pour approximately 1.5 cups of water into a pot. When the water begins to boil, add the quinoa, a pinch of salt, and cook for approximately 20 minutes, until the seeds open. Remove, drain, and set aside.

Cut the chicken into cubes and add a pinch of salt. Drizzle some olive oil in a pan and cook the chicken until they brown. Let them cool down.

Wash the lettuce and slice, or chop and place in the salad bowl.

Peel and grate the carrot and add to the salad.

Finely slice the radishes and halve the cherry tomatoes. Add to the salad.

Lastly, add the chicken to the salad and toss. Serve on two plates and enjoy.

Tips & Tricks

Are you in the mood for a good dressing for your salad? In a cup or small bowl add half a teaspoon of mustard, a drizzle of balsamic vinegar, 2 or 3 tablespoons of olive oil, pepper, and salt to taste. Mix with a spoon. Drizzle over your salad and enjoy.
