Place the potatoes on a plate and heat them in a microwave, covered, for 8-10 minutes (until you can prick easily with a fork).

Meanwhile, add a bit of salt to the chicken breast and cook in a pan for several minutes, until it is cooked inside and golden outside.

Remove the potatoes and place in a bowl with water so they lower in temperature. Peel afterwards.

Chop the potatoes and mix in a bowl with the tomatoes, bell pepper, onion, olives, and chopped chicken. Dress with salt, and a drizzle of olive oil. It is optional to add some chopped green onion.
Tips & Tricks
If your potatoes are small you can use one more.
You can add a bit of garlic powder or black pepper to the chicken to give it more flavor.
You can add your favorite vegetables to this salad if you have them available.
You can also add a bit of aioli to give it more flavor.
