Wash and cut the broccoli into florets.

Peel and dice the potatoes. Boil in a pan of water with half a teaspoon salt. In 15 minutes they will be soft, unless cut into large pieces. About 5 minutes before this, add the broccoli to the same pan and cook together with the potatoes for the remaining time. Turn off the stove and drain the vegetables.

Fry the chicken breast in a skillet with a little olive oil. Season with a pinch of salt. You can cut the potatoes into strips, slices, dice, or large chunks... as desired.

Combine all the ingredients –– the potatoes, broccoli, and chicken –– in a bowl. If you want to, you can dress the potatoes and broccoli with a delicious mustard vinaigrette we explain how to make in "tips and tricks."
Tips & Tricks
The broccoli and potatoes can be cooked any way you like –– steamed, baked, boiled, or fried.
You can also dress the potatoes and broccoli with a mustard vinaigrette. To make this, pour 6 tablespoons olive oil into a bowl. Add 1 tablespoon Dijon mustard, 2 tablespoons lemon juice, a little salt and pepper (1 tablespoon honey, optional), and mix well.
