Sweet Potato, Avocado, and Chicken Bowl

Peel and dice the sweet potato. Fill a pan with plenty of water and bring to a boil. When the water comes to a boil, add the sweet potato and cook until tender, about 10–15 minutes.

Heat a little olive oil in a skillet or griddle and cook the chicken with a little salt. Once cooked, you can cut it into thin strips, dice... any way you like.

Put the cooked sweet potato into a bowl, cover with a generous handful of lettuce, diced tomato, chicken, and avocado pieces.

Tips & Tricks
You can cook the sweet potato any way you like. You can steam it in the microwave, bake it in the oven, or boiled as in the recipe.
You can also add a handful of sesame seeds. We toasted them in the skillet for around 1 minute before tossing them on the bowl. The result was amazing.
Why not serve it with a fabulous dressing? Mince half a clove of garlic and combine in a bowl with a cup of yogurt, a dash of lemon juice, a pinch of salt and (if you have it and like it) a handful of minced cilantro. Mix well, season with a little pepper, and use.
