Preheat the oven to 350°F.

Peel the carrots and chop.

Add the eggs, chopped carrots, date paste, and the milk into a food processor or blender and blend the ingredients.

Add the flour, cocoa, and mix again.

Add to a detachable mold of about 6 inches and bake for 28-30 minutes. Let it cool while we make the mousse.

For the mousse we will need whipping cream and chocolate, minimum 70%. Begin by heating up the whipping cream in the microwave for 2 minutes. Add the chopped chocolate and let it stand for 2 minutes. Now mix so that the chocolate melts.

Place a bit of plastic wrap on top of the mousse and place in the fridge for about 1.5 hours. After this time, beat with a hand mixer until it doubles in volume.

Spread on top of the cake you have prepared and let it stand for a minimum of one hour in the fridge.
