Beat the egg in a bowl with the milk. Stir in the flour gradually to prevent lumps from forming.

When the batter is smooth, cover the bowl with a cloth and chill for one hour in the fridge. The cloth must not touch the batter. Stir occasionally.

Melt butter in a skillet over medium-high heat. Spread the butter evenly inside the skillet with paper towel, removing the excess.

Add enough batter to thinly cover the skillet. When the edges turn golden, flip and cook on the other side.

When the frixuelo is ready, transfer to a plate sprinkled with sugar and sprinkle more sugar on top. Repeat the process until the batter is used up.

Roll them up and enjoy!
Tips & Tricks
Add a tablespoon of liquor, such as brandy or anisette liqueur, to the batter to add some kick.
Frixuelos are neither sweet nor savory. Their flavor depends on the filling so experiment with different things.
