Eggplant, Sun-Dried Tomato, and Hummus Sandwich

Wash and cut the eggplant into thin slices. Heat some olive oil in a grill pan or skillet and lightly fry the eggplant slices on both sides until golden.
Toast the bread on both sides.
Spread the bottom of the sandwich with hummus (homemade is best) and cover with a layer of washed spinach leaves. Then cover with a few eggplant slices, followed by sun-dried tomatoes. Cover with more spinach leaves and close the sandwich with another slice of bread spread with hummus. That’s all there is to it!
Repeat the process to make a second sandwich.
