Cut the turkey breast into slices or fillets, as desired.

Heat a little olive oil into a skillet. Lightly fry the turkey with a pinch of salt. Remove and set aside for later.

Toast the bread in the same skillet. Just open the bun and place in the skillet for a couple of minutes.

Then assemble your sandwich. Place a layer of spinach, then a few pieces of turkey breast and cover with a few sun-dried tomatoes (drained if they were in oil). Cover with a final layer of spinach and then cover with the top piece of bread.
Tips & Tricks
Feel like making the yoghurt dressing? Awesome! It’s super easy to make. Mince half a clove of garlic and combine in a bowl with a cup of unsweetened plain yoghurt, a dash of lemon juice, a pinch of salt and (if you have it and like it) a handful of minced cilantro. Mix well, season with a little pepper, and use.
